Easy Homemade Chicken Noodle Soup

Ingredients

16 Ounce(s) Chicken Breast
1 ½ Cup(s) Water or chicken broth
1 Tablespoon(s) Olive Oil
1 clove garlic minced
½ Yellow Onion chopped
3 Celery sticks chopped
3 Carrot (medium) peeled and chopped
1 Pinch(es) Salt to taste (be generous!)
1 Pinch(es) Black Pepper to taste (be generous!)
1 ½ Teaspoon(s) Thyme
1 ½ Teaspoon(s) Oregano
4 Cup(s) Chicken Broth or stock (1 entire package of 32 oz broth)
1 Cup(s) Water
6 Ounce(s) Egg Noodles or your pasta of choice

How to make Easy Homemade Chicken Noodle Soup

  Heat 1 ½ Cups of water, chicken broth or stock in a pot over medium heat.

  Add the chicken breast, and let it boil, before simmering covered for 20 minutes, flipping once or twice. Once cooked, take out the chicken and set aside.

  Add celery, carrot, salt, pepper, thyme and oregano to the pot, stirring well and cooking for 10 minutes.

  Add the remaining chicken broth/stock and water, including any you reserved when cooking the chicken.

  Allow it to come to a boil, then add the egg noodles. Let cook for 8-10 minutes, then take off the heat.

  Shred the chicken with a fork into small bite-size pieces and add to the soup.

  Taste the soup and adjust the seasonings! Divide the soup into 3 containers, then freeze any extra for future meals.
