02 Sift together flour, baking powder, soda and salt in a large Bowl. Add in cold butter to mixture and cut into the dry ingredients with a Pastry Cutter until the mixture is resembles coarse crumbs.
03 In the middle of the mix, make a well and pour in the cold buttermilk and gently stir until just combined.
04 Flour a work surface and then turn dough out onto it, shaping dough into a rectangle.
05 Fold the rectangle lengthwise into thirds, rotate dough half a turn. Gather crumbs, flattening the dough back into a rectangle. Repeat process two more times, folding and pressing a total of three times.
06 Roll out dough with rolling pin onto floured surface until about a ½” thick. Use a 2 ½” Biscuit Cutter to cut out biscuits, rerolling any leftover scraps until all biscuits are cut and no dough remains. Should yield about 12 biscuits total.
07 Onto the prepared Baking Sheet, transfer the biscuits. With your thumb, indent top of each biscuit and brush buttermilk on the tops of each.
08 Bake for 15 minutes in preheated oven until biscuits are golden brown and flaky. About 15 mins.
09 Ensure your butter and buttermilk are cold for this recipe!!
