How to make Keto Lasagna with Zucchini Noodles
01 Preheat Oven to 375 Degrees F.
02 Cut zucchini into long thin slices with a Mandoline. If you don't have a mandolin you can use a knife by Chopping off both ends of the zucchini then stand the zucchini up on one of the cut ends and carefully slice straight down.
03 To remove excess liquid, lay zucchini slices out on paper towels, sprinkle with salt and let sit for 15 minutes. After 15 minutes, wipe off the excess moisture and salt and fully pat dry.
04 Melt butter in a Saute Pan, add onion and cook until translucent (about 7-8 minutes).
06 Add minced garlic and italian seasoning to ground beef and cook for an additional minute. Set aside 2-3 tbsp marinara sauce and add the rest to the ground beef mixture.
07 Add the onions to the ground beef mixture. Lower heat to medium-low and simmer for 5-10 minutes.
08 While the sauce simmers, Whisk together cottage cheese, egg and parmesan in a large Mixing Bowl. Set aside.
09 In a lasagna pan, place a layer of zucchini noodles slightly overlapping, making sure to leave no gaps. Then add a layer of mozzarella followed by half of the meat sauce and spread with a spoon. Then add a layer of ½ the cottage cheese mixture and spread with a spoon. Then add another layer of zucchini, mozzarella, meat sauce and cottage cheese mixture. Now top the lasagna with a final layer of zucchini noodles and the 2-3 tbsp of marinara sauce that you set aside earlier. Spread evenly with a spoon and top everything off with a layer of mozzarella.
10 Bake in the oven, uncovered for 30 minutes. Then turn on the broiler for 1-2 minutes until cheese begins to bubble and brown.
11 Remove from oven and cool for 30 minutes or cool in the fridge. If you cut into the lasagna while it's hot there will be a lot of excess liquid in the bottom of the pan.
