This recipe is great if you have some leftover sausage! Just toss it on the pan with a couple of other ingredients and you have yourself a meal!
Pork Sausage:
Ideally, this is a serving of the same pork sausage used for Saturday morning's breakfast.
Otherwise, use an alternative sausage of your choice or ground chicken or turkey instead.
No Avocado Oil:
Use extra-virgin olive oil instead, but reduce the heat to 350 and cook for longer to
compensate for the reduced heat setting with this type of oil.
Leftovers:
Refrigerate in an airtight container for up to 3 days. For best results, reheat in the oven.
