How to make Viva's Popper Dip
01 Preheat to 350 degrees F (175 degrees C).
02 Line a Baking Sheet with foil and place a Baking Rack atop. Lay bacon strips in a single layer and bake until crisp (25-35 minutes).
03 Drain on a paper towel-lined plate and then increase the oven temperature to 375 degrees F (190 degrees C).
04 Heat some canola oil in a Skillet over medium heat and cook the onion for about 2 minutes. Throw in some garlic and cook until fragrant (1-2 minutes).
05 Set aside and let cool! Coarsely Chop 4 slices of bacon and mix with bread crumbs in a Bowl.
06 Coarsely Chop the remaining 4 slices of bacon and mix with Neufchatel cheese, cheddar cheese, onion-garlic mixture, jalapeno peppers, cumin, and oregano in the Bowl of a Stand Mixer fitted with paddle.
07 Spoon mixture into an 8-inch Pie Pan and sprinkle the bread crumb-bacon mixture over the dip. Bake in the preheated oven until dip is bubbling and topping is lightly browned (12-15 minutes).
08 This is a moderately spicy dish, but don't worry - use fewer jalapenos if you would like it on the milder side! And don't forget to wear plastic gloves when Chopping jalapeno peppers & you'll be all set to enjoy Viva's Popper Dip!
