How to make World's Best Beef & Guinness Stew
01 Start by cooking and stirring bacon in a heavy Skillet over medium-high heat until it's browned and crisp, 3-4 minutes.
02 Then, season beef chuck with salt and black pepper, and sear it in the Skillet until browned on both sides.
03 Transfer the bacon and beef to a large stew pot, leaving the fat in the Skillet.
04 Next, reduce the heat to medium and cook onions in the retained fat until lightly browned, 5-8 minutes.
05 Throw in some garlic, pour in some beer, and stir.
06 Then, add tomato paste, carrots, celery, thyme sprigs, sugar, black pepper, and enough chicken broth to cover.
07 Simmer the stew over low heat until the beef is fork-tender, about 2 hours, stirring occasionally.
08 Finally, remove the cover and increase the heat to medium-high. Bring the stew to a low boil and cook until it's slightly thickened, 15-20 minutes.
09 Discard the thyme sprigs, adjust the salt and pepper to taste, and serve with mashed potatoes in a Bowl!
