How to make Blueberry Love Muffins
01 Preheat oven to 400F (200C). Line Muffin Tin with 8 liners, or grease pan to prevent the batter sticking to the pan.
02 In a large BowlWhisk together sugar, flour, baking powder, and salt until combined.
03 In a small Liquid Measuring Cup, combine oil and egg, topping up with milk until you reach the 1 Cup mark., Mix together and add to dry ingredients, mixing only until just combined. Fold in blueberries and set batter aside.
04 For topping: combine sugar, flour, butter, and cinnamon in a small Bowl and mix until sufficiently crumbly.
05 Scoop batter into Muffin Tins filling right to the brim. Sprinkle with desired amount of crunchy topping.
06 Once oven is preheated, bake muffins until a toothpick inserted into the center of a muffin comes out clean, about 20 to 25 minutes.
07 In order to prevent muffins burning, add 1 tbsp of water to empty spaces in pan.
