How to make Easy Homemade Chicken Noodle Soup
01 Heat 1 ½ Cups of water, chicken broth or stock in a pot over medium heat. Add the chicken breast and let it boil, then simmer covered for 20 minutes, flipping once or twice. Once cooked, take out the chicken and set aside.
02 In the same pot, add 1 TBSP of oil and heat over medium heat. Mix in garlic and onions, and cook for five minutes. Add celery, carrot, salt, pepper, thyme and oregano to the pot, stirring well and cooking for 10 minutes.
03 Add the remaining chicken broth/stock and water, including any you reserved when cooking the chicken. Allow it to come to a boil, then add the egg noodles. Let cook for 8-10 minutes, then take off the heat.
04 Shred the chicken with a fork into small bite-size pieces and add to the soup. Taste the soup and adjust the seasonings.
05 Divide the soup into 3 containers, then freeze any extra.
