How to make Maple Pork Loin Chops
01 In a small Bowl, Whisk together brown sugar, sea salt, ½ Teaspoon garlic powder, onion powder, ½ Teaspoon paprika, ¼ Teaspoon black pepper, dry mustard and fennel seeds. Pat pork loin Chops dry with a paper towel and score the meat on both sides with a sharp knife.
02 Rub the spice mixture onto all sides of the Chops, including the scored lines. Cover and refrigerate for 4-6 hours. Then, Whisk together maple syrup, brown mustard, a pinch of garlic powder, paprika, black pepper and cayenne pepper in a small Bowl - set aside!
03 Coat the Chops with seasoned bread crumbs, heat up some olive and canola oil in a Skillet and add garlic. Place the Chops in and cook until lightly browned, 2-3 minutes per side, then return them all to the pan.
04 Reduce the heat to medium, drizzle in half the maple syrup mixture, turn and cook until glazed. Then drizzle in the remaining maple syrup mixture, turn and cook until glazed. Reduce the heat to low and cover the Chops to cook until slightly pink in the center.
05 A thermometer inserted into the center should read at least 145 degrees F (63 degrees C). For outdoor grilling, lightly oil the rack, spray the outside of the Chops with oil, and grill on both sides until crisp. Then, baste both sides with the maple mustard glaze, flipping frequently until cooked through!
