I've tried several different roasted potato recipes, but I always come back to this one. They are crispy and fluffy and so delicious! I use it as a side dish for so many different meals.
02 In a Bowl, mix together Parmesan cheese, salt, garlic powder, paprika, and black pepper.
03 Blot the cut-side of the potatoes with a paper towel to remove any moisture, place in a Bowl and drizzle with 1 Tablespoon of vegetable oil, tossing lightly to coat.
04 Sprinkle the potatoes with the Parmesan cheese mixture and toss to coat. Arrange the potatoes, cut-side down, onto the prepared Baking Pan and bake for 15-20 minutes.
05 Turn the potatoes to cut-side up and continue baking until golden and crispy - about 15-20 more minutes.
06 Serve with sour cream and enjoy! Don't forget to press the cut sides of the potatoes into the Parmesan mixture that sticks to the sides and bottom of the Bowl, distributing it as evenly as possible among the potatoes. Bon Appetit!
